TraditionalOur finest grade of aged balsamic condiment from Modena, Italy is produced in the Traditional Style. It is aged using the Solera system for up to 18 years in chestnut, oak, mulberry, and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent Condimento is exceedingly rich, complex and dense.
Pairings: It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes, or marinades. Also try drizzled over ice cream or with fresh fruits and berries.
Dark ChocolateThis Dark Chocolate Balsamic Vinegar is rich, thick, and resounds with the complexity of three different chocolates responsible for the depth of its flavor.
Notes: Drizzle over vanilla gelato, mix with fresh berries or add zing to your chicken mole sauce.

EspreesoThis aged balsamic vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee. Caffine Free.
Notes: It makes a fantastic glaze or BBQ base for pork, beef, or chicken. Add a shot to an “affogatto float”, which calls for a tall mug of vanilla gelato scoops covered with coffee.

MapleWe have searched high and low, and it appears that we have created the first of its kind, an Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont. This balsamic is outrageously good.
Notes: Think pancakes, waffles, glazing bacon, pork chops, ice cream, dressings, marinades, chocolate, cake, fruit, and on, and on and on.
